1 dry coconut - grated
3 cups white flour
3 teaspoons baking powder
cup water
cup melted margarine
cup mixed peel
cup cherries
cup currants
1 cup raisins
1 tbs Angustora Bitters
1 tsp vanilla essence
2 tbs Cherry Brandy
1 cup brown or white sugar.


1. In deep bowl, mix - coconut, Sugar, water, essence, bitters, margarine and Cherry Brandy.

2. Sift flour and mix with other dry ingredients (baking powder, currants, raisins, cherries etc.)

3. Add the ingredients in deep bowl. Mixture should be a soft dough.

4. Pour into greased loaf pan, bake in oven at 350F or 175C for 50 minutes.

5. Remove from oven and baste top with a mixture of 2 tbs sugar & 2 tbs water.
Return to oven. Bake 5 more minutes.
